I have always felt most comfortable in that strange and changing intersection between front and back of house, between the kitchen and the customer. And in my twenty-plus years in food and beverage, I also discovered a love for training and for teaching. As I grew in my roles, that training and teaching combined with a depth and breadth of experience that allowed me to support a wide variety of teams, including hotels, small bars, stand alone restaurants, suppliers, producers, and even new to market operators. In 2016, PRJ Operations Consulting joined Enlightened Spirits to bring our experience to New England and we are proud to support the small businesses that make the Food and Beverage world exciting.
